Spring Berry and Tortellini Salad with Raspberry Vinaigrette Dressing
2 large handfuls of Spinach
1/2 cup Cheese Tortellini
4 fresh Strawberries, tops removed, quartered
1/3 cup fresh Blueberries
1/4 cup Pecans
3 Tbsp Pumpkin Seeds
1 Tbsp Goat Cheese (herbed goat cheese is my favorite)
Raspberry Vinaigrette Dressing Ingredients
1 cup fresh Raspberries
1/2 tsp Raw Honey
1 tsp Olive Oil (I used lemon olive oil to add a little pizzaz)
1 Tbsp Balsamic Vinegar
Cook the tortellini according to package. After draining the tortellini, rinse with cold water. Let sit in strainer to drain fully.
Place spinach in a large bowl. Sprinkle berries, nuts and seeds over the top. Next add your tortellini and crumbled up goat cheese.
To make the dressing, add all ingredients into a blender. Blend until smooth. Drizzle the dressing over the top of the salad and have a taste of spring in a bowl.
