Mac & "Cheese"
½ cup Raw Cashews, soaked (or ½ cup tahini)
½ small Butternut Squash, peeled, seeds removed and cut into 1” chunks
1 small Sweet Potato, peeled and cut into 1” chunks
½ small Sweet Onion
1 cup Roasted Red Pepper
2 cloves Garlic
1½ cup Nutritional Yeast
1 tbsp Dijon Mustard OR Lemon Juice
½ tsp Black Pepper
½ tsp Cayenne Pepper
½ tsp Sea Salt
½ tsp Paprika
1 pound Pasta of your choice
Soak raw cashews in hot water (just enough that all cashews are completely submerged), covered for 30 – 60 minutes until they have softened.
Place prepared squash, sweet potato, onion and garlic into a pot of water. Make sure there is enough water that all vegetables are completely submerged. Bring contents to a boil. Reduce to a simmer and cook until sweet potato and squash are both tender.
Combine cooked pasta and cheesy sauce together in pot over medium heat until all pasta is coated and the pots contents are nice and warm.
