Lunch: Baked sweet potatoes, Roasted beets, Steamed collards, a little salad with baby corn and mixed olives
Dinner: "Buffalo" Cauliflower Lettuce Wraps (Packed with quinoa, shredded carrots, green onion, jalapeño, broccoli sprouts and cashew sour cream)
"The In-betweeners": Matcha tea latte (Matcha green tea, extra protein almond milk, raw honey)
After my post last night, I had a serious burst of energy, running/dancing around like a mad woman which meant it was time to work out. A great work out that lasted much longer than usual. I feel that I did a wee bit too much complaining and while I was running I wondered why. I have so much more energy and feel great....why did a hard lunch time run my emotions during my write up. Well, not today. LUNCH WAS GLORIOUS! Do you see the beautiful rainbow on that plate?! I literally was smiling like a goof as I sat down to eat. All my meals today were amazing.
My sister said the buffalo cauliflower actually tasted like buffalo chicken (I think she's just really hungry). We're both feeling great and in good spirits. My brother even commented on how healthy my sister looked. The hard work and self control is paying off (I told her it would!). A positive day 4 and the weekend is almost here (which is usually the hardest when it comes to avoiding the "bad" stuff). Gonna keep on keeping it fresh and fit!
