Lunch: Creamy Roasted Broccoli and Asparagus Soup (I literally blended up the leftovers from yesterday's dinner adding sautéed garlic and sweet onion, adding unsweetened almond milk as the mixer. Threw it in a pot on the stove and BOOM, lunch. Perfect for this cold gloomy Sunday and super quick and easy for my busy schedule. Always use your leftovers!)
Dinner: Spaghetti Squash and Chickpea Balls with a Creamy Garlic Basil Sauce (Avocado, lemon, garlic, basil and water)
Today was the last day of the cleanse. While it feel like today was never going to arrive, the week really did fly by and I'm feeling oh so fine. I won't lie....it was hard times when Kevin made a huge pile buffalo chicken wings and ate them in front of my sister and I. But we feel good so its all good. We have both decided that tomorrow is just like any other cleanse day, and it will start with a smoothie and "normal" food won't be consumed until lunch. Because it's just food after all. Our bodies love the smoothie. It was so awesome to have a partner this year for the cleanse! Thanks to my sister for accepting the challenge and killing it!!
Tomorrow starts a new, recharged way of living and a whole new appreciation for food. Portion sizes will stay down and vegetable consumption up. Indulging will be kept to a minimum. I feel lighter, healthier and more energized and want to stay that way. What's up happy healthy 2015!
My sister, Alison, wrote a little reflection for everyone....here it is!:
"Now that it is the last day of the cleanse, I can honestly look back and forget all the uncomfortable moments. Everything that I have gotten out of it is much more valuable than what I have sacrificed. It was pretty amazing last night, to no even finish my portion of dinner and still go to bed hours laster without hunger. Everything feels better, I feel lighter, my mind is clearer and even my chakras have opened up more. It is amazing how much your food affects you and I will continue to keep this in my mind in my everyday life. I was going to splurge tomorrow and get unhealthy take out for lunch, but I have already made myself a seasoned chicken breast to bring in to work instead. I'm proud and I'm thankful that my sister let me join her on this cleanse!"
