Chocolate Covered Cherry Smoothie
2 small (or 1 very large) Beets, trimmed and peeled
Greens from the Beets
2 cups Frozen Cherries
1/4 cup Raw Cacao Powder
1 cup Almond Milk (any kind of almond milk works, but chocolate almond milk makes this smoothie even more amazing), or more to obtain desired consistency
1/4 Avocado, peeled and pitted
Large handful of greens (always add some greens...spinach, kale...)
Place all ingredients into a blender. Blend on high until smooth, adding more almond milk as needed to obtain desired consistency. Want to get fancy? Top with a sprinkle of cacao powder or nibs and a cherry on top. Best enjoyed chilled.
Tip: If you use unsweetened almond milk like I do most of the time, add some dried, pitted dates to this recipe to naturally bump up the sweetness while adding some extra iron and calcium.
